Peruvian Mother's Tiramisu

You know that flavour of your favourite desert as a child?

This one is an absolute classic. Tiramisu, of course.

Here's a quick recipe

  1. Brew a Peruvian espresso and let cool
  2. In a bowl, beat together mascarpone cheese and whipped cream until light and fluffy
  3. In a separate bowl, stir together espresso and Kahlua (or other coffee liqueur)
  4. Dip ladyfingers into the espresso mixture, then place them in a 9x13 inch baking dish
  5. Spread the mascarpone cheese mixture over the ladyfingers, then sprinkle with cocoa powder.
  6. Refrigerate for at least 2 hours before serving

If you want to really make this Peruvian even after using Peruvian coffee then there is a little something you can add in... Lucama!

Lucama is a fruit that tastes like banana and caramel and you can get this in a powder form in many shops across the UK. Sprinkle some of that when doing the laying down the ladyfingers and you're in for a treat.
