Who is Luisa Zamaolla?

Luisa Zamaolla is a 52-year old coffee producer from the Huyro Valley, Cusco. She is a member of AYNI Specialty Coffee Producers Association (AYNI), a hyper focussed coffee organisation focussed on working with 5 families of coffee producers in the Huyro area. 


About Luisa Zamaolla and her farm, El Relojero

Luisa' farm, El Relojero is located in the  La Bola Farm, located in the Inkatambo village, near the base of the mountain, Apu La Veronica, part of the Huayro valley, Huaynopata District, La Convencion Province and Region of Cusco.


The farm has 8 hectares and focussed on cultivating coffee and tea. In 2020, it revitalised the area for coffee and started planting Bourbon, Giesha, Limani, and Typica. Alongside the coffee and tea, there are many fruit trees such as Avocado and Blackberry, and shade trees of Pacae among the natural forest which has become a home for many birds, which is what the farm is named after.


How was the coffee processed?


After each half of the harvest, the cherries are washed and pre-fermented in GrainPro bags for 48 hours. They are then de-pulped in a manual machine and placed in GrainPro bags inside a drum with water for an anaerobic fermenation and to control high temperatures for an average of 50 hours. 

Drying is carried out under shade for an average of 12 days to reach a humidity of 11%. The water for the process is from the Chaquimayo stream and has a pH of 7.4.


The role of AYNI for this coffee?


AYNI is led by Kevin Roman, a young coffee professional who has family connections to Huyro and the reason he created an organisation to solely work with people in this area. The assoications has grown and now has 13 families, they encourage knowledge sharing between all the members and Luisa is one that has vast experience having grown up with coffee all her life. 

Kevin sources the coffee from Huyro and sells wholesale roasted coffee as another income stream for the association. This is the first time they have exported coffee and worked with international buyers. The bar has been set with this Geisha and it's a very high one at that for Kevin and the AYNI producers to follow, we hope it can continue and are happy to support their work.

 

AYNI, is an Inca term which means reciproricty. Their ethos and vision is something we align on and it's great to find partners that match the way we like to source. Kevin has done an incredible job bringing together the producers of this area, improving the quality through pre and post harvest, as well as expanding the market, now internationally, improving the premiums of the past.


They are focussed on preserving the natural forests of the Huyro area and have organic and sustainable coffee practices used throughout the whole processs. From Guinea pig and sheep manure for compost to preserving the natural forest, they are some of the examples they are keen to keep working on.


How does Khipu Coffee know about AYNI?


We met Kevin at a cupping of Cusco coffees in Lima, 2023. From then on, we kept in touch and admired from a far the work he's been doing from their online presece. It was late this harvest that we sourced this Geisha and we're so happy we managed to kick start the relationship with a fantastic coffee.

Luisa is very curious coffee producer who is willing to experiment and improve the quality of her coffee in whichever way she can. She has found challenges this year with qualified labour shortages but is committed to keep working with AYNI because together, the group of coffee producers help one another, in the true spirit of the word.
