Who is Edwin Quea Paco?

Edwin is a coffee producer and his farm is called Finca Chiriloma . The farm is in a very  unique and mystical place located in Alto San Martin Chirumbia, District of Quellouno, Province of the La Convencion, in the Cusco region. The farm has been producing high-quality coffee for 18 years, and is well-known for its specialty coffee.


About Finca Chirilioma

Finca Chirilioma covers an area of 4 hectares and is located at an altitude of 1950 metres above sea level. The farm is named after its location - "Chiriloma" which means "cold hill", as special coffee is known to grow in higher places in the mountains. The farm is located in a tropical forest, which makes it unique and away from other coffee farms.

 

The farm cultivates different types of coffee, including Bourbon, Caturra, Maragoguipe, Mundonovo, Orange and Red Geisha and Typica. Edwin has 3.5 hectares in total cultivating coffee.


How was the coffee processed?

The coffee is hand selected and harvested. The cherries are cleaned, floated, and fermented for several days at temperatures between 20 to 24 c°t. The farm also uses their own coffee compost. Edwin has a drum on the farm to process the coffee and screens them to have a medium seed size.


What Edwin wants you to know

Edwin is a specialist in coffee growing, and has several certifications, including Q Grader, Q Processing, Barista, Roasting, and Brewing. The farm produces coffee in an organic way, without chemicals, and aims to produce high-quality coffee.

 

The farm was awarded 4th place in the Cup of Excellence during 2021 and 2022, and has won x2 gold and x1 bronze medals in an international competition in Paris 2022.

 

The unique location, cultivation practices, and commitment to producing organic coffee without chemicals make it a great choice for coffee lovers who appreciate quality and sustainability.


How does Khipu know the producer?

We met Edwin at Ficafe (Annual Coffee Conference) in October 2022. We were introduced by Eric Jala from Alpes Andinos and planned to visit the farm in December 2022. However, because of the strikes that were taking place in Cusco, we were unable to visit Quillabamba from Santa Teresa and road blocks stopped us from being able to get there. We do plan to visit Edwin and more producers from Quillabamba on our return to Peru in 2023.
